
Instant Pot Fancy Goulash is great for the extreme budget. While large elbow macaroni is the go to favorite in this dish; the fancy pasta packs at Costco, give you a better, fancier macaroni product that will jazz up this meal for a very small increas in your budget. Still you can probably put this meal together to feed 4-5 people for $12.00 or less. American Goulash, Slumgullion, American Chop Suey or what ever you call it, is the mother of Hamburger Helper. This dish easily morphs into many different concoctions. I use to make this dish with Soy Sauce, but I really never got excited over the addition of the soy sauce and I omit it now every time. What I think is so great about this meal is that most people probably have all these ingredients in their kitchen already. No need to go to the store, you can start cooking now.
Here is your list of items needed:
- 1 Pound Hamburger Meat (buy lean ground beef)
- 1 Pound Macaroni – Large Elbow is traditional but Cassarecce macaroni noodles fancies up this dish
- 1 onion
- 1 Red or green bell pepper
- 2 teaspoons Minced Garlic
- 2 tablespoons Oil
- 1 tablespoon Oregano
- 1 teaspoon Paprika
- 1 tablespoon Garlic Salt (approximately or to taste)
- 1 15 oz can tomato sauce
- 1 15 oz can diced tomatoes
- 3 cups beef broth
- 1 cup water
- 2/3rds cup sour cream
- 1 cup Grated Cheese
- Set your Instant Pot to Sautè Medium temperature.
- Dice the onion and pepper into larger pieces.
- Add 1 tablespoon cooking oil to your Instant Pot.
- Brown the hamburger meat in your Instant Pot with some garlic salt, once 75% cooked, remove and drain fat.
- Add 1 tablespoon cooking oil to your Instant Pot
- Sautè onion and bell pepper with some garlic salt.
- After two or 3 mins of cooking the onion and bell pepper return the meat, stir it all together and cancel the Sautè mode on your Instant Pot.
- Stir in the minced garlic, oregano and paprika.
- Follow this order as it is important. Add the Large Elbow Macaroni.
- Pour in the Beef Broth and water.
- Put the diced tomatoes on top of the macaroni noodles.
- Put the tomato paste on top of everything.
- DO NOT STIR
- Put the lid on your Instant Pot. If you don’t have the Ultra Model please make sure to seal the vent. Ultra owners do not have to worry about the vent as the vent is self sealing on the Ultra model.
- Select the Meat/Stew smart cooking program if you have it on your Instant Pot otherwise use the Pressure Cook mode. Set for 4 mins, High Pressure, Keep Warm = ON.
- This recipe has NO NPR (Natural Pressure Release), do not add NPR to this recipe unless you like mushy noodles.
- After the 4 min Cook Time has completed, do a Quick Release (QR) and open the lid once the float pin drops.
- Stir in the sour cream and grated cheese and it’s ready to serve.
